DISH:                                     DOMODA (PEANUT BUTTER STEW)

Ingredients

2-3 pounds meat – chicken or lamb, cut into pieces

smooth peanut butter

tomato paste

1 yellow or white onion

lemon juice

seeded tomatoes, crushed

salt and any other seasoning preferred

chicken or beef bouillon (optional)

pepper, regular or sweet potatoes, carrots and any other vegetables one desires

 

Method

Put meat in a skillet, add water. Cover and bring to boil.

Add tomato paste, blended onions, pepper and seeded tomato and veggies.

Add a pinch of salt and beef or chicken bouillon to taste {this is optional but does give it a better taste}. Any other seasonings will do, and you can spice it to taste.

After meat is cooked for about 20 mins or until tender, adds peanut butter. Bring to the boil then reduce the heat to simmer until some oil pops up.

Since peanut butter is a little sweet, add a few drops of lemon juice to reduce the sweetness.

Boil rice separately.

 

PS:          The soup is supposed to be spicy so I do add a lot of cayenne pepper or big peppers thrown in.  Meat or chicken can also be fried if desired.
