DISH: NDOLE AMBASSADE

Cameroon’s cuisine is rich and diversified. With more than 200 dishes and recipes in the country, we have chosen the Ndole to represent Cameroon’s diversity. Hereunder, the Ndole’s recipe:
INGREDIENTS
- 2kg of frozen and washed Ndole vegetable
- 1kg of smoked or dried fish (Hake is most advisable)
- ½ kg of smoked or boiled meat (Beef)
- ½ kg of fresh Shrimps
- 1 kg of onions
- 1kg of boiled and blended peanuts
- 45cl of vegetable oil
- One tea’s spoon of salt
STARCHES
- Fried Plantains or
- Miondo or
- Boiled Plantains
PROGRESSION
In a deep pot, steam the blended peanut for 15 minutes and stir regularly, add the fish, and 1/3 of the blended onion. Poor 30 cl of the vegetable oil and add the smoked or boiled meat. Stir for 5 minutes. Defrost the vegetables and add them to the peanut sauce. Reduce the fire and steam for 10 minutes. The Ndole is ready. In a frying pan, poor the rest of 15cl of oil and hot it for few minutes. Add the shrimps and stir for 10 minutes. Cut into small pieces the onions and add to the shrimps. Let it get done for 1 or 2 minutes. Serve the Ndole first and decorate the dish with the fried shrimps and onions.
